The defining way to separate a measurement issue from an actual oil pressure issue is to temporarily replace the sender with an old school 100% mechanical gauge.
The mechanical gauges have at least a magnitude faster response time and will reveal even the slightest variation in oil pressure.
Do not be surprised if it looks way worse than what you are currently seeing on the electric gauge.

You do not need to use anything of exceptionally high quality. Any 100psi gauge will do. This is only a temporary install.
The Oil sender port may look like the1/8NPT threads commonly found on Pressure gauges, but is more likely M10x1, so an adapter may be needed to install the gauge.
1/8NPT is 27TPI (Threads Per Inch), and M10 is 25.4TPI
The two threads are close and will cross-thread without much effort.

The Oil pressure gauge adapter should be readily available at most auto parts stores, Amazon, or eBay for under $10.
