Unless both sensors are bad ????. How about just connecting an analog gage to one sensor at a time and see the reading. My aircraft has an analog gage no programming required. Recheck dynon CALIBRATION or programming.
I have a friend whose oil temp on his zenith via dynon was reading way too high on 0200 continental engine. When we switched to regular old sensor and analog gage all was ok. Just don't know why after checking and calling but now he does not have a worrying distraction while flying.

I suggest that cooling temperature also depending on cowling and fresh air hit the radiator.minimum air flow is attached in file.
