Right your are Bill, a real hodgepodge of senders and guages, especially with VDO. The existing Honeywell sender is three-wire.
Is there a simple procedure for bench testing the sender while hooking up my existing VDO oil pressure gauge? I'd imagine a regulated air source would act the same as oil...but I know what assuming often does.

You have the idea!
Pressure is pressure; Fuel, Oil, Air, Water, Paint ... the sender doesn't care it is all just pressure.

I see that this is an old thread, but I post this in case there is someone else like me that has ended up here in search of finding the correct VDO pressure sender.
The VDO site has a 176 page pdf file that lists their senders and the data on each.
I could not copy the URL, so I hope I get this typed correctly.

This might be more helpful. I have yet to determine exactly which is correct for my 912UL because the sensor is at the airport and I am not.

Jegs and Summitt Racing has VDO senders. These here are just a couple more common senders. There certainly can be others.
One of the more common fuel sender's is VDO 360-043 double wire pole 1/8" x 27 npt 0-30 psi
VDO oil senders usually are
360-004 1/8" x 27 npt 0-150 psi single wire pole The sender gets its ground from metal to metal contact with the engine.
360-430 1/8" x 27 npt double wire pole 0-150 psi
If you have a new digital type which usually has 3 wires it may be a Kavlico.....
