If it runs smoothly with the choke/enricher on it sure sounds to me like a common fuel supply problem. In other words, both carbs running way too lean.

When you say you "redid the idle set up", what exactly did you do? If it runs smoothly with the chokes on, it seems likely to be a problem with the idle circuit(s).

Meant to update this earlier, managed to get someone in to help with the sync and I'm happy to say the engine sounds great - thanks everyone for your input. Alas today the oil pressure gauge went to 0 while taxiing but was fine after a few minutes and a restart..... going to guess it is the sender wire coming loose.
I need to hurry, not many flying days left before the sumer.
