I understand and appreciate your position of running both pumps all the time, I’ve had ATPs tell me that too. While I normally run on just the main, I’m careful to use both pumps until reaching a safe altitude, and before starting the final descent. I do consider that a restart could be difficult at times, but I have a hang up about wanting to know I have a pump in reserve (OCD for sure) and I would want to land as soon as possible if one pump failed. I think both arguments have some validity.

For the folks who operate 9-Series iS engines with both fuel pumps on at all times, consider your response to a dual charging system failure. Securing one pump after restart will extend your battery-only endurance considerably.
