I have a Pipistrel Virus SW with an MT constant speed prop. I have a bunch of pictures of my Dynon display at different power/RPM settings. I have one at 5000 rpms, 21.4" of manifold, 4.9gph, DA 9300' and egt below 1200. I have another at 5000 RPMs, 21.3", 3.9gph, DA 8900' and egts over 1300.

The engine selects ECO mode based on Manifold Pressure (MAP) and RPM. Power!
You should be able to maintain ECO Mode up to 900mBar(26") below 5500 rpm.
If you are seeing, for example, 27" or more at 5200rpm, you are Over Propped and lugging the engine.
The engine goes into Power Mode to save itself.

At Wide Open Throttle (WOT), can you make 5500 rpm in a climb, and 5800 in level flight?
Reducing the prop pitch will increase the RPMs and lower the MAP.

The engine will last much longer if you do not over stress it.
It will reward you with lower fuel consumption.

I cannot get the manifold pressure anywhere near yellow or red at any setting that I can remember. However, I don't think I've ever flown below about 3K feet DA. I can make 5800 rpm in a climb or level flight, I generally pull the prop back to 5500 at 500' agl and cruise between 5000 and 5500 rpm.

Something does not seem right here...

The numbers you stated should put you in ECO Mode.

It is good that you can get to 5800 in a climb.
I'll bet the climb performance is exceptional.
It is natural that you will throttle back after the initial climb and during cruise.
Otherwise, you risk the possibility of over-revving.
Most owners will limit their climb performance by coarsing the prop enough that they can go wide open in cruise without over-revving.
This is just for the convenience of not having one more thing to think about.

There may be something else going on.
I recommend dumping the engine log file and see what is different in ECO and Power modes.
Time to beak out the BUDS!

How can I get my hands on a BUDS dongle?

Whoever does your routine maintenance should be in possession of one.
    If that person is you...

It has been argued that every engine should include one from the factory.
    It really isn't an option.
