I'm being told by the company that makes my Engine monitor to hook up one of the leads from the rev counter and ground the second. Does this make sense? Why not just leave it alone?

    You need to ground the other lead that is not connected to the tacho. If you think about it, the pickup is a coil, which will have two ends. You attach one to your tacho signal and the other end to earth which will make the circuit.
    If you only connect one lead, the circuit will be open.
