... where is all this condensation water supposed to be coming from? ...
When the fuel burns in the cylinders, a lot of it is converted to water.
A portion of the exhaust gases naturally leak past the piston rings into the crankcase.
These moist vapors produce the pressure used to return the Oil back to the Oil tank.
In an automobile, the crankcase vapors are handled by the PCV (Positive Crankcase Ventilation) system that routes the vapors back to the engine intake to be burned again.
Millions of cars operate quite well without having to distill the water out of the Oil every day.
Hot moist exhaust gasses meeting Cold Oil will cause condensation.
The same gases contacting Hot Oil will not condense.
As long as you get your Oil temperature over ~80°C you will be fine.
The Hot Oil will evaporate all of its water like a simmering pot left on the stove too long.
The worst thing to do would be to start the engine and NOT run it long enough to get it Hot.
